Mari's Own Vegan Home Style Cooking Recipes

I love to cook and I am sharing some of my favorite vegan recipes.  These are home recipes, easy to make and do not require expensive, exotic ingredients. They are made using fresh, wholesome ingredients easily found at most regular grocery stores.

 

 
 

Family Style Chili - Vegan

This is a hearty vegan mildly flavored chili recipe.  Not too peppery but very flavorful!  I make this in my trusty crock pot and it comes out great!  It takes a bit of time and care but well worth the wait.
 
For the best results, use dried beans, not canned beans. The flavor and texture are much better using dried beans.
 
First, start the beans:
 
Ingredients:
1 cup dried kidney beans, (rinsed in cold water)
3-4 fresh peeled garlic cloves
2-3 tblsp olive oil
6-8 large bay leaves
2-3 tsp rosemary
2-3 tsp oregano
1 tblsp cumin seed
1/2 small jalapeno pepper
 
Combine all these ingredients in a 2 quart crock pot.  Add 6-8 cups cold water, or enough water to fill the crock pot to 3/4 full.
Cook on high setting for 3-4 hours.
 
Prepare vegetables:
1 piece fresh corn, slice away the corn kernels from the cob
1 fresh tomato, diced
2 medium size carrots, sliced 
1/2 fresh bell pepper, diced
6-8 fresh stalks of Italian parsley, chopped finely
 
Add the fresh vegetables to the cooked and seasoned beans. Stir well.
 
Add:
3 tsp ground regular chili. I use "El Guapo, New Mexico Molido Ground Regular Chili".  It is very mild, just a tiny bit peppery.  This amount will not make a hot peppery chili, season to your liking!
 
Stir all the ingredients well and let the beans with season stock and the vegetables cook for about 1/2 hour.
 
Add:
1/2 can undiluted tomato paste (about 1 cup)
 
Stir well.
 
Add:
1 cup uncooked small elbow macaroni
 
Cook for another 1/2 hour.
 
Season to taste with Braggs Liquid Amino Acids, or your favorite whole salt.
 
Serve over cooked macaroni or rice!
