I love to cook and I am sharing some of my favorite vegan recipes.  These are home recipes, easy to make and do not require expensive, exotic ingredients. They are made using fresh, wholesome ingredients easily found at most regular grocery stores.

 

MARI'S SUPER EASY & DELICIOUS VEGAN SPINACH PIZZA  

 
Everybody loves pizza, right?!  Homemade pizza does not require hours and hours of labor.  What you really need is an easy-to-do pizza crust recipe that won't fail you, and the rest of the pizza is up to your imagination!  
 
I really love spinach and I came up with this recipe that I want to share with you.  It is a low sodium, low fat, sugar and yeast free recipe.  And it is super delicious!  Also, I no longer use salt in cooking.  I use Braggs' Liquid Amino Acids, but I will give an estimate for salt also as many people use salt in cooking.
 
 
PIZZA CRUST, YEAST FREE
for one MEDIUM pizza pan
1 cup whole wheat flour
2 cups unbleached flour
1 tsp crushed oregano leaves
1 tsp black pepper
1 tsp salt
 
in a very large wide bowl, mix the dry ingredients together using a fork.  make sure the dry ingredients are mixed very well.
 
Mix 1/2 cup Bragg Apple Cider Vinegar with 2 cups cold water.  
 
 
you may not need the entire 2 cups of water, depending on how dry your flour ingredients are.    add the water slowly, mix using a fork, until you have a soft dough.  too much water creates a batter.  if you add too much water just sprinkle some flour over the dough and mix it well.
 
Knead the dough until it has a slight spring to it.
 
Roll out the dough on a floured surface with a wooden rolling pin.  
for easier handling, fold the dough over in half, pick up gently and place on a greased pizza pan..
 
Now that's an easy, very inexpensive and quick pizza dough  And it tastes great.  You can make up various toppings for it. 
 
Here's my spicy spinach topping recipe!
 
SPINACH TOPPING:
8 oz chopped frozen spinach
2-3 tblsp olive oil
3-4 cloves garlic
1 jalapeno pepper 
1 green bell pepper
1 tsp fennel seed
1 tsp dried thyme leaves
4-6 fresh basil leaves
1-2 tbls chili garlic sauce
1 tsp salt or season to taste
2 large round tomatoes, sliced 
 
saute the garlic (minced) with the jalapeno pepper (sliced) and bell pepper (chopped) in the olive oil.  add the seasonings (fennel seed, thyme, chili garlic sauce, salt).  add the frozen spinach and cook until just slightly tender.
 
That's it!  spread the spicy spinach topping on the pizza dough, sprinkle chopped fresh basil leaves over the spinach,and top it off with slices of fresh round tomatoes.
 
Cook at 400 degrees for 40 minutes.  I have an older gas oven and it is a "slow oven" so maybe if you have a hot oven or an electric oven, the cook time might be less.  I usually preheat the oven for 10 minutes.
 
I test the edges of the pizza to see if it is done.   If the edges of the pizza dough are very soft, put it back in the oven for another 5 minutes.  When done, the pizza dough edges should have a light crust feel.
