Mari's Own Vegan Home Style Cooking Recipes

I love to cook and I am sharing some of my favorite vegan recipes.  These are home recipes, easy to make and do not require expensive, exotic ingredients. They are made using fresh, wholesome ingredients easily found at most regular grocery stores.

 

OLD FASHIONED ROASTED ROOT VEGETABLES

This is a very easy recipe.  The fresh beets add sweetness and a delicate flavor to the potatoes and carrots.  I like eating these right after baking, and for a next day idea, I like to place the warmed vegetables over a bed of shredded lettuce and have a very nice salad!
 
If you have untrimmed beets, you will get those great tasting beet greens!  Beet greens have a wonderful flavor.  Try sauteeing them or steaming them, or add them to your favorite recipe that uses green leafy vegetables.
 
Ingredients:
3 fresh raw beets, washed thoroughly
4-6 fresh raw carrots
3-4 fresh yellow potatoes
1 raw jalapeno pepper
2-3 tbls vegetable oil
2-3 tbls Earth Balance Vegan buttery spread
1 tsp celery seed
1/2 tsp black pepper
1 tsp salt or Bragg Liquid Amino Acid
 
Trim the beets, and quarter the pieces.  
Quarter the potatoes.
Slice the carrots into small pieces.
Dice the jalapeno pepper.
 
In a large bowl, place all the vegetables and add the vegetable oil.  Toss all the vegetables until they are covered with the vegetable oil.  Add the celery seed, black pepper, salt.  Mix well.  
 
Place the vegetables in a covered baking dish.  Dot the top of the vegetables with Earth Balance Vegan buttery spread.
 
Bake at 375 degrees for 1 1/2 - 2 hours.
