I love to cook and I am sharing some of my favorite vegan recipes.  These are home recipes, easy to make and do not require expensive, exotic ingredients. They are made using fresh, wholesome ingredients easily found at most regular grocery stores.

 

MARI'S HOLIDAY SUPER TASTY AND VERY EASY VEGAN GINGERBREAD

The holidays are coming!  This is an easy, great tasting holiday treat!  It takes about 15-20 minutes to prepare.  You will not be disappointed in the delightful flavor and texture of this gingerbread, and your entire house will fill with an incredible aroma.  
 
Grease and flour a medium size baking pan.  Set aside.
 
Preheat oven at 400 degrees for 15-20 minutes.
 
Dry Ingredients:
1 1/2 cups unbleached flour
1/2 cup whole wheat flour
1/4 cup sugar
2 tsp baking powder (I prefer Mumford baking powder, a bit more expensive but worth it!)
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp black pepper
1 tsp salt (or use 1 tblsp Braggs Liquid Amino Acids as a salt substitute mixed in with the liquids).
 
Mix the dry ingredients very well in the large wide bowl.  I use a fork to mix, and fluff the flours.
 
Separately prepare:
 
Fruit:
1 med can sliced peaches, drain the liquid and set aside.
 
Ginger:
1/2 cup thinly sliced and chopped fresh raw ginger root (if you prefer to use dried ginger, use 2-3 tsp ginger powder).  The fresh ginger is really a great flavor booster!  If you can, use fresh ginger root!  Most grocery stores sell it.  Fresh ginger root will be moist when cut open.  I usually buy a nice big root, with a big thick middle portion.  It keeps well in the refrigerator in a plastic bag in the vegetable crisper.  
 
Syrup:
Drain the peach syrup in a separate bowl.  Add 3/4 cup full flavor unsulphured molasses.  Mix together well and set aside.
 
Add to dry ingredients:
1/2 cup vegetable oil and the syrup mixture.  Stir in lightly with a fork.
 
Then add up to 2 cups cold water.  Add enough water to make a medium consistency batter.  Add water slowly to avoid adding too much liquid.  Mix well with a fork.
 
Stir in the chopped fresh ginger root.
 
In the greased baking dish, place one layer of the sliced peaches.  Pour the batter over the peaches, evenly to fill the baking dish.
 
Bake uncovered at 400 degrees for 1 hr 15 minutes or done.  Test with a toothpick or knife to see if the gingerbread is done.
 
Let cool before slicing.
