I love to cook and I am sharing some of my favorite vegan recipes.  These are home recipes, easy to make and do not require expensive, exotic ingredients. They are made using fresh, wholesome ingredients easily found at most regular grocery stores.

 

ZESTY SPAGHETTI SAUCE, WITH ONIONS & CARROTS

 
 
This is a quick and easy spaghetti sauce, with lots of flavor.  It cooks up in less than an hour.  It is great on spaghetti and it also makes a great pizza sauce.
 
I am fussy about flavors.  Onions are one kind of flavor -- garlic is another.  I don't like to mix them, just my personal preference.  So this recipe calls for only onions, no garlic!
 
Ingredients:
4-6 small yellow onions, or 2 medium to large yellow onions
2 medium carrots
1 large round tomato
1/2 fresh jalapeno pepper
3 tbls olive oil
1 small can tomato paste
2-3 tsp dried thyme
2-3 tsp dried sage
2-3 tsp dried rosemary
1 tsp celery seed
1 tsp fennel seed
2-3 dried red pepper pods, crushed
1 tsp black pepper
1 tsp Bragg Raw Apple Cider Vinegar
1 tsp salt or salt to taste.  I use Bragg Liquid Amino Acids for salt seasoning.
 
 
Dice the onions, carrots and tomatoes and jalapeno pepper.  Saute in the olive oil.  Add the dried spices and a small amount of water.  Simmer on medium heat for 15 minutes, stirring occasionally.  Add the tomato paste.  Mix well with the cooked vegetables.  Add 1 tsp vinegar and stir well.  
Add 1/2 cup water, and cook on medium heat for 1/2 hour.  
Season with salt to taste after the sauce has cooked down a bit.
